Super Easy | Muffins are a fantastic easy bake that you can have ready to eat in under 30 minutes. The trick to the perfect muffin top though does require leaving the batter to rest for an hour, but it’s not essential so you can choose whether you have the patience for that or not.

Staple and easily accessible ingredients | This recipes uses simple ingredients that will more than likely already be in your kitchen ready to go. Much like banana bread, this is the ideal recipe to make when you want to use up some old left over bananas. The recipe is also adaptable meaning if you don’t like coffee, even though it’s not overpowering, you can simply remove it from the recipe.

HOW TO GET THE PERFECT MUFFIN TOP RISE

A signature muffins has a distinctive rounded top which almost overflows over the edge of the muffin case. This is what we call the Muffin Top.

In many recipes the batter is decanted straight into the cases and baked straight away, however in this recipe I ask you to leave the batter to rest for an hour. In doing so you let the baking powder and bicarbonate of soda get to work before they’re introduced to heat.

You’ll notice after an hour that the mixture is bubbly and light so work with it gently as you move it into your muffin cases so you don’t deflate any of the air that’s been created.

Banana Coffee Muffins

Ingredients

For the muffins

  • 3 bananas ripe
  • 150 g caster sugar
  • 50 g coffee powder
  • 1 tsp vanilla
  • 100 ml vegetable oil
  • 2 eggs large
  • 50 ml fresh espresso coffee
  • 300 g plain flour
  • 1 tsp baking powder

For the coffee crumble

  • 50 g melted butter
  • 75 g plain
  • 50 g soft brown sugar
  • 1 tsp coffee powder

Instructions

For the muffins

  • Preheat your oven to 200°C and line a muffin tray with 12 muffin cases.
  • In a medium bowl mash the bananas down well then add the vanilla, sugar and coffee powder and mix well.
  • Follow with the espresso, oil and eggs and whisk it all together until well combined.
  • Fold in the flour and baking powder and mix it all together gently until just combined.
  • Leave the batter to rest for 1 hour until bubbly and risen

For the coffee crumble

  • Combine the melted butter, brown sugar and coffee together in a medium bowl then add the flour and mix until you have large crumble clumps.
  • Scoop the bubbly muffin mixture into the prepared muffin cases then sprinkle over the coffee crumble.
  • Bake for 20 minutes until well risen and golden then leave too cool a little before serving.

How long will these muffins keep?

These muffins will last approximately 3-4 days if left in an airtight container somewhere dry and at room temperature

Can I freeze these muffins?

You can freeze these muffins once baked in a freezer safe container for up to 3 months. To defrost them get them out of freezer and the freezer bag and leave on the kitchen side until completely defrosted.
