Ingredients:

To make this simple one bowl strawberry cake you will need:

  • Bananas | use good quality ripe bananas, the browner the banana the more sweet it’ll be.

  • Brown Sugar | Provides sweetness that works well to enhance the flavour of the banana but also adds a subtle caramel flavour.

  • Vegetable Oil | Adds moisture and helps create a soft and tender sponge.

  • Eggs | use the best-quality eggs you can find and make sure they are at room temperature. Eggs provide this cake with structure and richness. This recipe uses 2 large eggs.

  • Chocolate Chips | Use good quality dark or milk chocolate chips, I like the mini chips as they add great pops of chocolate flavour and mix well with the batter without sinking.

  • Sour Cream | adds moisture and gives the cake a light and soft crumb.

  • Vanilla | added to the sponge mixture to compliment the flavours.

  • Plain flour | sift your flour into the mixture for best results and to avoid lumps.

  • Baking powder | helps give the cake a fluffy rise, 

  • Salt | balances and enhances all the flavours

  • Dark Chocolate | use high quality dark chocolate if possible for optimal flavour

  • Double Cream | using a full fat double cream will give you a ganache that’s rich and creamy.

How to make a smooth ganache:

This ganache is the perfect consistency for piping into the centre of the muffins and remains as smooth and creamy once inside the muffins. A ganache is made simply with hot cream and chocolate, the trick to the perfect consistency though is the ratio. Too much chocolate will give you a firmer set ganache which is ideal for covering cakes but not what we want for these muffins.

For a pipe-able, smooth ganache that doesn’t firm up you will need to follow a 1:1 ratio, meaning you want to use equal parts cream and bitter-sweet chocolate. I say bitter-sweet because if you use milk chocolate you’ll need to use less cream. In this case I would advise a 1:2 ratio cream to chocolate.

Regardless of the ratio the method should be the same

  1. Heat the cream in heatproof bowl in the microwave on 30 second bursts until it’s steaming.

  2. Add the finely chopped chocolate or chocolate chips and leave it for 2-3 minutes. It can be so tempting to stir at this point but it’s important to wait those few minutes to allow the chocolate to melt. The process of stirring can cool the hot cream down which may mean some chocolate doesn’t quite melt.

  3. After 3 minutes stir the mixture well until smooth then cover with cling film and leave to set for 30 minute – 1 hour.
