These Funfetti Brookies are the perfect hybrid of two favourite bakes; fudgey chocolate brownie and chewy Funfetti Cookie. They are so easy to make and even more delicious to eat!

  • Two for one bake | Brownies and Cookies are two of the most popular bakes out there so when you can't decide between a rich chocolate or a chewy cookie, this bake is the ideal solution.

  • Delicious flavours and textures combined | It's hard to resist the flavour and texture combination of a fudgey rich chocolate brownie and chewy cookie. As you bite into the brownie bar you crunch down into a delicious chewy vanilla cookie, but then are immediately greeted with a soft gooey rich brownie. I don't think a bake could get any better.

  • Creative, fun and easily adaptable | Just looking at these brownies is enough to make you smile. They're such a joyful bake to create and you can easily adapt the ingredients in the cookie to make them a different flavour. Some other delicious options include;

Ingredients to make Funfetti Brookies

  • Unsalted Butter: This adds richness to the brownies and cookies

  • Caster Sugar: It’s the process of whisking sugar and eggs together that give the brownies a glossy, paper-thin, crackly top.

  • Brown sugar: provides a good flavour and texture to the cookie layer

  • Salt: Balances out the sweetness in the toffee

  • Cocoa powder: The addition of cocoa powder will give the brownie structure, a softer texture and an enhanced chocolate flavour.

  • Plain Flour: used in both the brownie and the cookie layer to provide structure to the bakes.

  • Eggs: Use the best-quality eggs you can find and make sure they are at room temperature.

  • Vanilla Extract: To enhance the chocolate flavour in the brownie

  • 200g dark chocolate chips: Good quality chocolate will provides a rich and luscious brownie.

  • White Chocolate Chips: To add to the cookie layer

  • Funfetti Sprinkles: Buy the good quality thick strands as these don’t bleed into the bake

  • Equipment:

    Both Brownies and cookies are such a great every day bake that you may find that you have most of the tools you need to make these Funfetti Brookies but just in case see the list below of the key tools you will need.

    • Several sized mixing bowls 

    • Handheld electric whisk 

    • Whisk

    • Rubber Spatula 

    • 8″ or 9" square baking tin 

    • Non stick baking paper 

    • Good quality chocolate and cocoa powder 

    • Funfetti Sprinkles

How to make Funfetti Brookies

The steps to making this delicious Brownie and Cookie hybrid are really straight forward, but there are several ways you can combine the two together.

Make the Cookie Dough | To get started you'll need to create the cookie dough first. Ideally you want a cookie dough that spreads quite easily as you want the cookie to bake over the brownie once in the oven. Some recipes like my Triple Chocolate Chip Cookie recipe use a high flour ratio which is great if you want a cookie that can go straight into the oven as it doesn't need to be chilled, but a cookie dough with a lower flour ratio is better for this recipe as you want it to spread.

Make the Brownie | You can follow any brownie recipe for this bake but I like one that is super rich, dense and fudgey. To get this texture there is a certain method that I like to use where the eggs and sugar are whipped together first to give the bake lots of rise.

Combine the two together | When combining the two bakes together you could choose to cover the entire top of the brownie with the cookie dough so you have a layer of brownie and a layer of cookie. Or you can marble it like I have in this recipe by adding a variety of cookie dough ball sizes across the top. With this method you get a really fun pattern across the top when baked and get to see both the cookie and brownie in each slice.

 

Expert baking tips!

  • Use High-Quality Chocolate: The better the chocolate, the more decadent the bark will taste.

  • Chill your brownies before cutting: Once cooled, pop the brownie in the fridge for a few hours or overnight and you'll be able to slice it easier. You will also find the brownie is much fudgier once firmer too. 

    Keep your brownies fresh: Brownies are ideal as they keep really well and even taste better after a few days. 

    Store your brownies in an airtight container and leave at room temperature somewhere dark. They will keep for at least 5 days.

How do you cut the perfect brownie slice? 

Once cooled, pop the brownie in the fridge for a few hours or overnight and you'll be able to slice it easier. You will also find the brownie is much fudgier once firmer too. 


Can I freeze the brownies? 

Yes once cooled, you can either wrap the entire brownie slab and freeze or slice them into squares and freeze them individually. 

To defrost, leave out wrapped at room temperature until fully defrosted.
