Combining two delicious treats into one with these Red Velvet Tiramisu Cups. Soft and fluffy red velvet sponge is soaked in coffee syrup and layered between a sweet and creamy mascarpone cream. This is the perfect bake for treating someone special, or simply just treating yourself.

Ingredients to make Red Velvet Tiramisu
Unsalted butter – you want this softened and room temperature so it incorporates well with the sugar.
Caster Sugar
Eggs – 2 large eggs are needed. Make sure they’re at room temperature too so they don’t alter the temperature of the butter and sugar
Vanilla extract – use high-quality extract like Nielsen-Massey for the best flavour.
Plain flour
Cocoa powder – sift the cocoa powder to remove any big lumps.
Bicarbonate of soda - helps the cake rise
Buttermilk – thicker than normal milk, almost the texture of yoghurt, with a tangy flavour. The acidity in buttermilk work together with the Bicarbonate soda to help the cake rise whilst also providing a really soft texture.
White wine vinegar – mixed with the bicarb, a little vinegar makes your sponge light and tender and intensifies the red colour.
Red food colouring gel – go for a good quality food colouring that isn’t too watery
Coffee - strong espresso is good for this to get the best coffee flavour. You could also sweeten it up with a tsp of sugar
Mascarpone Cheese - swapping the classic cream cheese out for mascarpone is what makes this a delicious Tiramisu red velvet.
Double Cream - make sure it’s full fat for the best flavour
Equipment:
9x13 baking tin
Baking paper
6cm circle cutter
Small glass tumblers
Offset Spatula
How to make Red Velvet Tiramisu
Mix wet ingredients: Cream the butter and sugar until light and fluffy. Add the eggs one at a time, then add the buttermilk, food colouring and vinegar and mix everything together.
Add dry ingredients: Fold in the flour, cocoa powder and baking soda and mix until smooth and well incorporated.
Bake: Pour the batter into the pan and bake for 18-20 minutes
5. Make the icing: Whip the double cream until thickened, then add the mascarpone cheese and mix together until all combined and smooth. Pour the icing into a piping bag.
6. Assemble : Cut out 6cm circles of cake with a cutter. Add one to the bottom of a glass tumbler then soak with coffee and pipe mascarpone cream over it. Top with the other red velvet cake and repeat with the mascarpone cream. Sprinkle with some cake crumbs, a dusting of cocoa powder and top with a chocolate heart
Repeat this process with all other mini cups
7. Serve or Store: Serve immediately or store overnight in the refrigerator for up to 48 hours.
Expert baking tips!
Chill the cups before serving: For the best texture let the tiramisu chill in the fridge for an hour before serving.
Customise Your Toppings: Add a chocolate heart to give this a cute Valentine’s touch
Add plenty of coffee: Soak the sponges in plenty of coffee for a great kick of flavour
