These Love Monster Brookies are the perfect love story involving a lonely Brownie who fell in love with a Cookie. The thing with Brownies and Cookies is that they are DIVINE in their own right, but bring them together as one and you’re left wondering why you haven’t been eating them like that the entire time. So give them the best of both worlds this Valentine’s Day with this perfect two for one dessert; The Love Monster Brookies.

Two for One | Brownies and Cookies are two of the most popular bakes out there so why bake just one their favourites when you can bake them both in one.
Delicious Texture | It’s hard to resist the flavour and texture combination of a fudgey rich chocolate brownie and chewy cookie. As you bite into the brownie bar you crunch down into a delicious chewy vanilla cookie, but then are immediately greeted with a soft gooey rich brownie. I don’t think a bake could get any better.

Make the Cookie first | As brownie batter should ideally get put straight in the oven as soon as it’s ready, it is advised to get the cookie dough ready first. If left too long on the side the air you’ve incorporated into the brownie batter can begin to deflate meaning you loose some of the rise.
Keep your Cookie Dough at Room Temperature | There’s no need to chill this cookie dough as you don’t want it to affect the temperature of the brownie batter. You also don’t need to worry about it spreading too much as that’s exactly what you’re looking to achieve.
Use Good Quality Ingredients | Brownies thrive when they’re baked using good quality ingredients, especially the chocolate. You want to use a chocolate that is 70% cocoa to get the best depth of flavour so avoid using anything less like Milk Chocolate.
Manage the Baking Times | If you’ve baked brownies and cookies separately before you will know they both have different baking times. Brownies generally need around 30 minutes, where cookies only take about 10-15, so when baked together it’s important to keep your eye on the bake. The cookie will bake first so the best way to avoid it burning as the brownie finishes off is to create a tent with tin foil or baking paper and cover the top of the baking tin after the Brookies have been in the oven for about 15 minutes.
