When a combination of two baking classics tastes like it should be classic all on its own, these Millionaire Snickerdoodles are one of the best cookies ever. A classic Snickerdoodle cookie is stuffed with a soft caramel, then once baked its given coating of milk chocolate and shortbread crumble.

Ingredients to make Millionaire Snickerdoodles

This delicious recipe uses lots of ingredients that you are likely to already have in your cupboards at home, but there may be a couple of specific extras you need. 

  • Plain Flour: Provides structure to the cookie, giving it a chewy yet soft texture.

  • Bicarbonate of Soda & Baking Powder: Help the cookies rise and add a light, airy texture, preventing them from being too dense.

  • Cream of Tartar: Essential for the signature tangy flavour in Snickerdoodles, this also works with baking soda to create a soft, slightly chewy texture.

  • Salt: Balances the sweetness and enhances all the other flavors.

  • Unsalted Butter: Adds richness and moisture, creating a soft and tender cookie base.

  • Caster Sugar: Sweetens the dough and helps create the classic crisp edge around the cookie

  • Brown Sugar: Adds depth with a hint of molasses flavor and keeps the cookies moist and chewy.

  • Egg: Provides structure and helps bind the ingredients, creating a chewy texture.

  • Vanilla Extract: Adds warmth and enhances the overall flavour of the cookie.

  • Cinnamon (for rolling): The cinnamon-sugar coating is classic for Snickerdoodles, providing warmth and a little texture on the outside.

  • Soft Caramels:  Use soft caramels vs hard caramels to ensure you get the soft and gooey centre you want from these cookies. I have used Werthers Original Soft Caramels for this recipe.

  • Milk Chocolate Chips: Use the best quality you can find for a luscious chocolate layer on top of the cookies.

  • Shortbread (crumbs): For the final piece of "Millionaire" shortbread crumbs will give these cookies the finishing touch.

How to make Millionaire Snickerdoodles

1. Prepare the cookie dough | Scoop 1-2 tbsp of dough and roll into balls then use your thumb to press down into the centre of the cookie balls and create a well.

2. Stuff the cookies with Caramel | Place a soft caramel into the centre of the well and wrap the cookie dough around it shaping it back into a ball then chill the dough for 10 minutes

3. Roll in Cinnamon Sugar | Once slightly chilled, coat the cookie dough balls in cinnamon sugar then place back onto the baking tray and bake the cookies for 10-12 minutes until golden and puffed.

4. Add the Chocolate Layer | Once cooled spoon a layer of melted milk chocolate onto the tops of the cookies

5. Finish with a sprinkle of shortbread crumbs and leave the chocolate to set before serving.

 

Expert baking tips!

  • Make sure you use soft caramels: Soft caramels will remain soft and gooey once baked and cooled. If you use a hard caramel it will harden again once cooled so you won’t get that delicious pull.

  • Cooling: Scoot the cookies with a cookie cutter straight from the oven to bring any cookies that may be misshapen back into a circle.
